Guilt-Free Brownies (GF/DF/VG)

Yes, this is for real. Brownies that are delicious, gooey, and not chalk-full of processed sugar and grains. It's a chocolate-lover's dream come true!


What makes these brownies healthy? They're dairy-free, gluten-free, and use the natural sugars in dates for sweetness. Plus they're full of protein to keep your blood sugar levels balanced.


Truvani plant-based protein powder is my all-time favorite for adding a boost of protein into breakfasts, snacks, and desserts like this one. Why do I love it?

Gluten-Free Chocolate Date Brownies


Ingredients

  • 12oz (approx. 2.5 c) pitted dates

  • 4 eggs

  • 2tsp vanilla extract

  • 1c melted coconut oil

  • 2/3c unsweetened cocoa powder

  • 3/4c gluten-free flour (I used my own milled mix of sprouted brown rice, amaranth and buckwheat but anything should work ok)

  • 1/4tsp salt

  • 1tsp baking soda

  • 1 scoop Truvani Chocolate Protein Powder, optional

  • 3/4 c semisweet chocolate chips, optional


Instructions


  1. Soak dates in very hot water for 15mins. Drain and save 1/2-1/4c of the liquid.

  2. Blend dates in a food processor or blender until mixture turns into smooth paste while adding the soaking liquid.

  3. Add eggs to the food processor one at a time. Add melted coconut oil, vanilla and process until incorporated. Add cocoa powder and process again.

  4. Add gluten free flour, salt, baking soda, protein powder, and process for 20 seconds.

  5. Let mixture rest for 5 minutes.

  6. Pour batter into a 12x8 baking pan lined with parchment paper or greased well with coconut oil. Sprinkle chocolate chips on top and press into batter a bit.

  7. Bake at 350 for about 40 minutes.
